Happy Mother's Day
to all the Mothers in my life!
 


Mamaw...would babysit and tell us to run and get in bed when she saw the lights of our parent's car coming up the road.  We always pretended to be asleep when they came in.  She would take us to circle the Dairy Dip with all the teenagers before we were able to drive.  She owned her own restaurant and was a wonderful example of a hard working, self-sufficient woman.  She always had to go out the same door she came in.  She carried a buck-eye in her purse.  She loved people and they all loved her.  We sure miss her. 

Grandma...Victor's grandmother and one of the two prayer-warrior grandmothers who set us up on our blind date.  She had the most giving heart I have ever witnessed.  She loved her family and her Walter Lee. 

 Nanny...Victor's mother and the best mother-in-law in the world.  She would do anything for us and our children.  She is always serving others.  She is also a people person and is so much fun to be around.  Love you, Nanny!



Gamma and Gandaddy ~ she must have avoided the camera like I do because I have very few pictures of her.  Or maybe she was always in the kitchen!  Gamma was the most witty of all the grandmothers with a dry sense of humor.  A preacher's wife and the second half of the praying grandmothers who fixed me up with my husband!  She always was very opinionated about who I should date.  Thank God for her wisdom.  I have never figured out how to make her savory pot roast.  It's still the best I've ever tasted.  She was my yard-sale mentor, my best friend (we would lie in bed for hours talking about everything), and my personal prayer warrior.

Our little Bagsby family, just getting started.  I could write a book about my beautiful mother.  She taught us to be good, to be true, and to be ladies.  I love you, Mother!

Crock Pot Sweet Potatoes

We love sweet potatoes.  I have prepared them many different ways, but this is the absolute easiest for a dinner side dish - or even the main dish!



To save a ton of clean up, line the crock pot with foil.


Give the potatoes a good scrub and poke a few holes with a sharp knife.

Cook on high for 3-4 hours


We love ours with a little butter, brown sugar and a sprinkle of cinnamon.
These are always a huge hit with the Andrews family.

I served these with salmon patties.

The Art Attic

I spent some special time with sweet friends this week ~ and my heart rejoiced!
We visited a little art gallery called "The Art Attic" and painted some pretty poppies.  Some of us have a natural artistic ability and some of us can't paint stick figures (I am definitely in the latter group), but we did it!  We all ended up with a beautiful painting.  More importantly, though, we made memories and spent quality time cherishing and nourishing our friendships.



















Mr. Larry's Chess Pie

Today, I'm baking a couple of chess pies.  The recipe comes from a cookbook that our elementary school put out a few years ago.  Mr. Larry's Chess Pie is the name of this delicious concoction.  Mr. Larry worked in the library when my children went to school there.  This recipe calls for buttermilk, so it's sort of a combination chess/buttermilk pie.  It has won a blue ribbon each time Claire has entered it in the fair!

Mr. Larry's Chess Pie

3 eggs
1 1/2 c. sugar
3 T melted butter
1 T white corn meal
1/2 c. buttermilk
1 1/2 t. vanilla extract
1 (9 inch) pie shell


Preheat oven to 375 degrees.  Beat eggs with wire whisk.  Add sugar, butter, cornmeal, buttermilk and vanilla extract.  Mix well.  Pour into an unbaked 9-inch pie shell.  Bake in preheated 375 degree oven for 20 minutes; reduce heat to 350 and continue baking for 25 more minutes.
